Main Dishes
Rice
- Rinse with water a few times. Put rice in pot, add 2.5 cups of water. For Japanese rice, add 300 ml of water.
- high heat until boiling, then low heat for 13 minutes. Pour out the excess water, let it sit in the pot
- For rice cooked in stock, check the pot periodically to make sure it's not too dry
Baked Potatoes
- 2 hours in slow cooker. Don't peel
optionally served with pasta, rice, glass noodles. season with oyster sauce, soy sauce, salt and pepper
Pilaf
- Add oil and cook onions
- Add carrots, mushrooms
- Add meat
- Add salt, pepper, paprika, turmeric
- Add rice and glaze it with fat
- Add broth/water, bring to a boil and simmer
Fried Rice
Using a pot because I'm too lazy to clean a pan
- Add oil and cook onions
- Add carrots, mushrooms
- Add meat
- Add salt, pepper, soy sauce, oyster sauce
- Add water and rice, bring to a boil and simmer for 5 minutes
- (optional) add eggs
Japanese Butter Rice
- Rice + butter/olive oil + soy sauce
- (optional) add tofu
Ochazuke (Tea-Over-Rice Soup)
- Add cooked rice and {tea/broth}, soy sauce, oyster sauce, black pepper, salt. Bring to a boil
- Reduce heat to medium, add fish or other meat and simmer until the meat is cooked
- (Optional) add cooked tomatoes
Steamed Fish
- Put fish in a bowl, add soy sauce and oyster sauce. Steam for 15 minutes
Chawanmushi
- Add 2 eggs, water (2x of eggs), soy sauce and use a fork to beat vertically to reduce bubbles
- Add mushrooms / meat. Can also put noodles / glass noodles at the bottom
- Steam for 15 minutes
Potato Salad
- Cook diced potatoes
- Saute onions (+mushrooms/meat)
- Toss cooked potatoes, add salt, black pepper, oregano, olive oil
- Drizzle with vinegar
Jambalaya
- Saute onions, bell peppers and celery
- Add meat
- Add paprika, garlic, and a pinch of cayenne (or extra black pepper)
- Add broth, bring to a boil, them simmer for 5 minutes
Ramen
- Cook noodles in broth until almost done, then put in a bowl (separate the broth)
- Brown onions and mushrooms
- Add meat and cooking sake
- Put meat in a bowl (so it doesn't get too dry)
- Add greens, simmer for a few minutes
- Add meat and noodles back to the pot, simmer for 1-2 minutes
- Season with salt, black pepper, oyster sauce, soy sauce
